- 4 cups chicken broth (or stock)
- 2 Tbsp. butter
- 1 yellow onion (large)
- 6 cloves garlic
- 28 oz. petite diced tomatoes
- 2 Tbsp. red chile powder (I used NM red chile)
- 1 Tbsp. cumin
- 1 Tbsp. smoked paprika
- kosher salt (to taste)
- fresh cilantro (Optional:, chopped for garnish)

very good, so easy; wish I'd found this recipe long before. I make a bone broth with the remains from any whole chicken that I make so I used that to boil the rice in for 15 minutes or so until most of the liquid is absorbed, then added 3 tbsp of pinto bean seasoning and a healthy tbsp of smoked paprika with 2 cans of Hunt's, petite diced tomatoes with roasted garlic
skipping the sauteed onions.

This was really good. I decided to use pre-cooked white rice which still turned out nice. I didn't do the broth with rice but used bouillon in the tomato/spice mixture.

Not a fan. Thought this was over spiced to the point of bitterness. Made it exactly as the recipe stated, but I think the tablespoon of smoked paprika was what did the dish in.

First recipe I’ve tried for Spanish rice and it is so great! Used minced garlic and onion and crushed tomatoes. Same measurements.

Had never made spanish rice before. My son had it somewhere and requested it. I am no expert on spanish rice, but did enjoy this recipie. Will make again.

I added a little more chili powder and used diced tomatoes with jalapenos. the flavors were incredible! Far better than anything I've ever had in a restaurant.

Too soupy for my taste. I used fresh New Mexico chili powder. 2 T was too spicy.

This is just the recipe I was looking for. I have tried so many disappointing recipes for Spanish rice, but not this one! This is now part of my regular repertoire.

It was very good with the chicken i made as well. I will be making this again for my family of three!
