Turned out excellent! Follow the recipe exactly and did no changes. It will definitely be on the winter rotation.

I don't eat meat, but I love vegan soyrizo. I heavily modified this recipe, but the result was amazing! I used vegan chorizo and (obviously no bacon), but kept the other ingredients the same. I left out the heavy cream and added spinach in after letting the soup simmer for 20 minutes. I also used half a cup of diced tomatoes instead of tomato paste. I do recommend simmering your soup for 30 minutes if your potato chunks are a bit on the bigger side.
