- 2 slices white bread (good quality, crusts removed)
- 5/16 cup buttermilk (or whole milk)
- 30 grams manchego cheese (grated finely, about 1/3 to ½ cup, OR Romano, OR Parmesan)
- 40 grams serrano (shaved and finely minced jamon de, OR prosciutto, OR pancetta)
- 3 Tbsp. minced onion (about ¼ onion)
- 3 Tbsp. parsley (minced)
- 1 clove garlic (minced or crushed)
- 1/4 tsp. salt (or more, to taste)
- 1/2 tsp. freshly ground black pepper
- 1/4 tsp. paprika (use Spanish paprika, if you have some)
- 225 grams ground beef (preferably from the chuck)
- 225 grams ground pork
- flour (for coating, optional)
- oil (for frying)
- 4 Tbsp. extra-virgin olive oil (divided)
- 1 cup diced onions (finely, you can use the ¾ onion left over from making the meatballs)
- 30 grams serrano (shaved and finely chopped jamon de, OR prosciutto, OR pancetta)
- 4 cloves minced garlic
- 1 tsp. chilies (minced dried New Mexico, avail at Market on Yates, OR ¼ tsp red chile flakes)
- 1/2 tsp. sweet paprika (Spanish, if possible)
- 5/16 cup dry white wine
- 2 cups canned whole tomatoes (pureed with their juice, about ½ large can)
- 1/4 tsp. salt (or more, to taste)
- 1/2 cup parsley (minced)
- 2 cups chicken broth (or water, as needed)
