- 4 lb. chicken legs (mine were attached, but you could also use drumsticks and thighs)
- salt
- pepper
- 2 Tbsp. extra virgin olive oil (Spanish)
- 1/2 lb. cured chorizo (Spanish, sliced into half moons)
- 2 red onions (large, chopped)
- 1 1/2 tsp. ground ginger
- 1/4 tsp. ceylon cinnamon
- 1/4 tsp. ground coriander
- 1 pinch ground cloves
- 1 pinch allspice
- 1 pinch ground cumin
- 1/4 tsp. saffron threads (crushed and soaked in ¼ cup warm water)
- 2 Tbsp. pomegranate molasses
- 1/3 cup pomegranate balsamic (Ah Love)
- 1 cup white wine vinegar (see directions)
- 1/2 cup chicken stock
- 1/2 lemon
