I’ve made this recipe several times and it is one of my very favorites but the key ingredient in my opinion is a great quality “grilled” Italian vegetables. The best brand I have used so far is “Salento Vegetable Antipasti” which are sun dried in EVO. I think it is made by Contadini. Although the price ranges from $9.99 to $11.99 for an 8.1 oz jar, it makes all the difference in the world. And, since you are spending so much for this one single ingredient, use fresh (not frozen) cod. The rest of the ingredients i usually find at Trader Joe’s. If you can’t find the Antipasti, the second choice is the TJ’s grilled Italian veggies which are frozen but do use a strainer when you defrost them and then add a good quality EVO. I also add a little fresh cilantro or parsley prior to serving, depending on which herb you favor. This dish is hearty enough for a red wine or a very dry full bodied white, but select a big wine. Serve it with brown or white rice (add olive oil when cooking) or toast a baguette. A Side light citrus vinaigrette with greens is a nice touch as well. Enjoy !

I might have cooked it too long. The fish was too flaky and kept falling apart. It tasted great. I would make this again.
