- 2 inches onions (large, sliced root to tip)
- 10 cloves chopped garlic
- 2 Tbsp. sweet paprika
- 1 Tbsp. paprika
- 1 jar sweet peppers (15 ounces or so, or 5 roasted red, chopped)
- 1 cup crushed tomatoes
- 2 cups white wine (or red)
- stock (if needed, whatever goes with your choice of meat)
- 1/2 cup meat (diced cured, : Bacon, pancetta, ham, etc.)
- 1 Tbsp. fresh rosemary (chopped)
- 4 leaves
- 1/2 cup fresh parsley (chopped)
- 1/4 cup olive oil

- pepper
- 1 handful dried mushrooms (optional)

Love this stew; unfortunately I don't love making it as my Dutch oven is cast iron and the long simmering with tomatoes is enough to kill my seasoning by the end of the cook so warning to cast iron lovers! The dish itself though is so good, usually we make this with pork loin or beef.
