- chopped tomatoes (A tin of peeled and)
- 2 Tbsp. brown sugar
- 1 sprig fresh rosemary (cut finely)
- salt
- black pepper
- 1 onion (small, finely cut)
- 1 red pepper (small, cut finely)
- 1 clove garlic (chopped fine)
- 15 mL olive oil
- 1 tsp. paprika
- 1/2 tsp. turmeric
- 1/2 tsp. coriander seeds (ground, – I grind mine in a pestle and mortar with the cumin seeds)
- 1/2 tsp. cumin seeds (ground)
- 1 tsp. dried oregano
- 1/2 tsp. salt
- 1 cup rice
- olives (Pimento, for serving)
