- 1 medium onion (diced)
- 1 bunch green onions (diced)
- 1 clove garlic (minced)
- 2 lb. frozen spinach (defrosted, rinsed, drained and chopped)
- 1/2 cup fresh parsley (chopped)
- 2 Tbsp. dill (fresh or dried, to taste chopped plus some for garnish)
- 1/2 cup silken tofu
- 2 eggs
- 1/2 cup ricotta (Vegan, OR Traditional Ricotta if vegetarian)
- 1/4 cup vegan Parmesan (Alternative OR Traditional Parmesan if vegetarian)
- 1/2 cup extra firm tofu (OR use Feta if vegetarian)
- 20 sheets phyllo dough (defrosted in the fridge overnight)
- 1 cup vegan margarine (Melted, OR Butter/Margarine if vegetarian)
