It turned out well, my wife and I enjoyed it!
Here are few tips to make it even better next time.
Considering this is a very simple dish the quality of the ingredients is “extremely” important. Make sure you can get the best ingredients you can to enhance this dish to the next level:
- You really need extra virgin olive oil, not any olive oil. Make sure you get your sun-dried tomatoes in extra virgin olive oil, or consider drying your own tomatoes, a big batch can last for a long time and you could use it for other dishes.
- Same thing with the cheese, get a good Parmiggiano Reggiano, Grana Padano or good pecorino romano. The cheese it’s so important!
You can add the following ingredients to add extra layers of flavour:
- Toasted pine nuts. Like the original basil pesto recipe, some pine nuts into the mix that goes to the food processor works wonders in this dish.
- Few pitted black olives (not too many) into the mix help too - make them almost unnoticeable, just a little bit of flavour.

I just picked up a huge jar of sun dried tomatoes from Costco and wanted to put them to good use - fantastic recipe! The blend of flavors was wonderful. Note: this does serve more than four.
