I added sautéed onions, red peppers, black beans and corn just to bulk up on veggies. Delish! Serve with a dollop of plain Greek yogurt instead of sour cream, promise no one will be able to tell the difference!

I added: black beans, green chilies, corn, and smoked chicken. I also topped it with sour cream before serving it. I think without these extra tasties the recipe would be quite bland.

I would definitely recommend putting chicken or beef in it to add that finishing touch.

seemed to lack flavor. maybe the enchilada sauce i used was not the best, but it wasnt as tasty as i was hoping. maybe some taco or chili seasoning would help?
