    Great! Easy recipe, I used a jar of salsa in place of roasted tomatoes, frozen chopped kale instead of fresh spinach, added a bag of frozen corn and crumbled some unsalted tortilla chips under cheese. Hubby went back for 2nd boat, kids super picky but each had a few bites

    Added avocado and black beans plus some extra spices!
    delicious and so healthy! I finished one entire boat today and I usually have a small appetite. My husband loved it too. Would definitely make again.

    I made this dish tonight - it was delicious! both my boyfriend and I kept raving about it. Neither of us have tried spaghetti squash - the recipe was super easy. The only thing I did that was a bit different was I added regular goat cheese and hot sauce on top. It melted a bit and gave me the tart sour cream taste I love. The hot sauce added a bit of kick. Thanks for the recipe, I am sure to make this again

    I have to say I was a bit concerned how hubby would like this, but we both loved it. Especially after the Thanksgiving meatfest it was a nice change. It was very easy, little cleanup, and quick. The only thing I added was a chopped hot red chilly pepper from the garden to spice it up a bit. Very good!
