Hubby loved it. Easy to prepare. Used black beans and added a little feta to cheese mixture.

This meal has become a staple in our house. It is simple to prepare and very filling. After making it exactly as the recipe dictates the first time, I decided to cut out the cheese entirely. My husband and I both agreed that although we love cheese, it didn't add enough to the meal to where we felt it was worth it to keep it (speaking from a nutritional point of view). I also don't bother putting the mixture back in the spaghetti squash shell, I serve it in pasta bowls.
