- 1 onion (diced, about 1.5 cups)
- 1/2 Tbsp. ginger (grated)
- 1/2 Tbsp. garlic (minced)
- 2 tomato (medium size, pureed)
- cilantro (to garnish, optional)
- 1 inch canela (Dalchini)
- 1/2 tsp. black peppercorns
- 1 bay leaf (Tej Patta)
- 1 tsp. cumin seeds (Jeera)
- 2 tsp. coriander powder (Dhaniya powder)
- 1/2 tsp. ground turmeric (Haldi powder)
- 1 tsp. red chili powder (Kashmiri, adjust to taste)
