- 2/3 cup prepared salsa (or diced tomatoes with chiles)

pretty Awesome. I used quinoa instead of rice. Chicken replaced beef. Topped with Mexican cheese last 3 min of cooking

Made this twice in the past two weeks, my picky dad really loved these. Very tasty.
I suggest less corn, more meat and using diced tomatoes (per ingredient list). If you’re using 4 peppers, you still will have quite a bit extra filling.
