- 4 cups black beans (cooked)
- 4 green onions (scallions sliced into thin rounds)
- 1 cup chopped cilantro (fresh)
- 2 jalapeno peppers (seeds removed, finely diced)
- 2 avocados (diced)
- 1/2 cup fresh lime juice
- 6 Tbsp. extra-virgin olive oil
- 1 tsp. ground cumin
- 2 tsp. sea salt (to taste)
- 2 cups quinoa
- 4 cups water
- 1 tsp. salt
- 2 Tbsp. toasted pine nuts (or toasted pumpkin seeds)
- 1/2 cup orange bell peppers (or finely diced red, green, yellow)
- 1/2 cup finely diced red onion (instead of scallions)
- 1/2 cup chopped fresh mint
- 1/2 cup corn kernels (fresh or cooked)
- fresh cilantro
- flat leaf parsley
- fresh basil (or fresh oregano)
- lentils
- red beans
- aduki beans
- pinto beans (or garbanzo beans for black beans)
- arugula (Serve on a bed of fresh, or salad greens)
- tomato (Surround with, wedges or cherry tomatoes)
