I am a fan of quick and easy recipes. The mixture of flavors here is so nice and since I don’t use salt at all in my food, the dressing was enough to give a good taste that is not bland. I didn’t have black beans on hand, but it turned out just fine. Thank you for the recipe, it’s a beautiful source of carbs to be served with my grilled chicken.

Fabulous-we had to substitute since my hubby has an allergy to cilantro-we used spinach & basil!. Next time I’ll try fresh basil! And I had no fresh peppers yet it was still yummy. We added fresh guac which made a real completion to the meal! Thank you!

I modified this a little out of necessity. The recipe calls for cilantro, which I didn’t have, I used a different color pepper. Also, I had run out of chili powder and didn’t remember that, so I substituted taco seasoning and just one tsp of garlic powder. No lime juice, so I used 1 T rice vinegar and 1 T garlic infused balsamic vinegar. Super tasty!
