- 1 lb. ground turkey breast (white meat only)
- 2 cloves garlic (finely chopped)
- 1 shallot (large, or 1/4 red onion, finely chopped)
- 2 Tbsp. cilantro leaves (chopped fresh, optional – parsley may be substituted)
- 1/2 bell pepper (small, red or yellow, seeded and finely chopped)
- 1 serrano pepper (seeded and finely chopped)
- 2 tsp. ground cumin
- 2 tsp. hot sauce (cayenne)
- 2 tsp. paprika
- 1/2 cup corn (I used 2 fresh corn on the cob – but canned works too!)
- 1/3 cup jack cheese (Monterrey, shredded)
- 4 English muffins
- 1 avocado (for topping)
- lettuce (for topping)
- tomato (for topping)
- 1/2 cup light mayonnaise
- 1 chipotle pepper
- 1 tsp. garlic
- 1/2 lime juice
