- 4 1/2 cups water
- 3/4 lb. potatoes (white, peeled and cut into ½-inch thick chunks, about 2 cups)
- 1 can black beans (cooked, 15 ounces - about 1½ cups, drained and rinsed)
- 1 can pinto beans (cooked, 15 ounces - about 1½ cups, drained and rinsed)
- 1 1/2 cups corn kernels
- 1 can diced tomatoes (14.5 ounces - about 1½ cups, undrained)
- 1/3 cup tomato paste (half of a 6 ounce can)
- 4 cups collard greens (coarsely chopped, or other greens)
- 1 1/2 cups cilantro (loosely packed, chopped, plus extra for garnish)
