- 1 head romaine lettuce (chopped)
- 1 ear sweet corn
- 1 red bell pepper (chopped)
- 1 cup cherry tomatoes (cut in half)
- 15 oz. black beans (rinsed and drained)
- 1/3 cup pepitas (roasted and salted, may sub. sunflower seeds)
- 1/2 cup pepper jack cheese (grated, or more to taste)
- tortilla strips (for Salads, I like Fresh Gourmet Santa Fe Style)
- 1 avocado (small, peeled and sliced)
- 1 jalapeno (small, seeded, deveined and roughly chopped, optional)
- 1 garlic clove (peeled)
- 1/4 cup cilantro (loosely packed)
- 1/4 cup sour cream (may sub.plain Greek yogurt)
- 1/4 cup salsa (smooth, medium for more of a kick)
- 1/4 cup milk
- 1 lime
- 2 Tbsp. olive oil
- 1/2 tsp. sugar
- 1/4 tsp. salt (EACH, ground cumin)
- 1/8 tsp. pepper (EACH, smoked paprika)
- hot sauce (to taste, optional)

I usually don't use a recipe for a salad, but this one just looked so darn good!! I'm so glad I did, it was FABULOUS!!! I mixed the salad together, and kept the dressing in a separate jar. The recipe makes a huge salad, I ate it for about 4 meals (and I ate huge amounts!!), and it kept find. I had left over dressing that I use with other greens.
