- 1 can black beans (drained and rinsed)
- 1 can corn (sweet kernel, drained)
- 1/2 red onion (chopped)
- 1 lime
- 1 tsp. salt
- 1/2 tsp. garlic powder
- 1 Tbsp. cumin
- 4 black bean and corn salsa (servings, see recipe above)
- 1 Tbsp. olive oil
- 2 Tbsp. chipotle seasoning (spicy, or seasoning of your choice)
- 1 1/2 lb. chicken breast
- 4 hearts of romaine (chopped and washed)
- 2 avocados (sliced)
- 1 cup tortilla strips
- 1 cup shredded cheddar cheese
- 10 Tbsp. ranch dressing (chipotle)
