- 1 pkg. smoked sausage
- 1 medium onion (chopped)
- 1 medium green bell pepper (seeded and chopped)
- 1 Tbsp. minced garlic
- 2 cups uncooked long grain white rice
- 15 oz. black eyed peas (or pigeon peas, drained)
- 8.75 oz. whole kernel yellow corn (drained)
- 8 oz. tomato sauce
- 3 Tbsp. sazon seasoning
- 1 Tbsp. sofrito
- 3 cups water

Directions
- Cut sausage into ½” cubes. Heat a 4-6 quart non-stick pan over medium-high heat for 3 minutes. Add sausage, onion, green pepper, and garlic; cook, stirring occasionally 3-4 minutes or until sausage is lightly browned.
- Add all remaining ingredients; bring to a boil. Reduce heat to medium-low, cover and cook 20 minutes or until water is absorbed. Let stand 5 minutes, covered. Stir gently and serve.

This was so simple besides the time to chop things it was very quick also. I only had half of the sazon so I used adobo for the other half and i used red beans instead of black eyed peas. I fed three people dinner as the main course and have almost 6-7 cups of left overs :)

Delicious!!!! Definitely a must do recipe at home, so easy to make and flavorful.
