- 8 oz. sausage (kielbasa, cut in 1/2″ half moons, I used chicken/turkey kielbasa)
- 1 onion (diced)
- 2 celery ribs (finely chopped)
- 1 red bell pepper (stemmed, seeded, and cut into 1/2 inch pieces, I used 1/2 red pepper and 1/2 green pepper)
- 4 cloves garlic (minced)
- 1 Tbsp. fresh thyme (minced, or 1 tsp. dried)
- 2 Tbsp. chili powder
- 1/8 tsp. cayenne pepper
- 3 Tbsp. all-purpose flour
- 1 1/2 cups low sodium chicken broth
- 2 lb. boneless skinless chicken thighs (trimmed)
- 2 cups instant rice (I used brown minute rice)
- 2 scallions (thinly sliced)
