- 1/4 cup green onion (chopped, + 1/4 cup chopped green onion, garnish, optional)
- 3 Tbsp. chopped parsley
- 3 cloves garlic (minced)
- 3 bay leaves
- 1 ham hock
- andouille sausage
- 1/2 Tbsp. cayenne pepper
- 1/2 Tbsp. black pepper (fresh)
- 2 Tbsp. kosher salt (to taste)
- 1 Tbsp. smoked paprika (or sweet pimenton)
- 1/2 Tbsp. thyme
- 2 dashes sauce (Tobasco)
- 2 cups long grain rice (prepared)
