- Crisco® Original No-Stick Cooking Spray
- 2 cups White Lily® Enriched Self-Rising Buttermilk White Cornmeal Mix (OR 2 cups White Lily® Enriched Self-Rising White Cornmeal Mix)
- 1 3/4 cups buttermilk
- 1 1/3 cups milk
- 1/4 cup Crisco Pure Vegetable Oil (OR Crisco All-Vegetable Shortening, melted)
- 1 large egg
- 2 Tbsp. sugar

Directions
- HEAT oven to 425°F. Spray 8- or 10-inch heavy skillet or 8-inch square pan with no-stick cooking spray. Place skillet in oven to preheat.
- COMBINE cornmeal mix, buttermilk, oil, egg and sugar, if desired. Mix well. Pour into skillet or pan.
- BAKE 20 to 25 minutes for 10-inch skillet or 25 to 30 minutes for 8-inch skillet or pan. Remove from pan and serve.

Mine is in the oven right now. I'm "trying" to imitate my grandmother's cornbread recipe and tried this one because it's one of the simplest I could find and closest grandma's. I'm working off the 64 year old man's memories of watching mom at 10 years old, and I needed a starting place to get the consistencies right.
First cooking spray was not around when my mom made grandma's cornbread, so since I didn't happen to have any. I didn't use it.
Second. Mom always used just plain cornmeal. Not any fancy self-rising stuff. So; that's what I'm using.
Third. Mom only used buttermilk not a mixture of milk/buttermilk....so I just used buttermilk. 2 cups.
Fourth. The oil was too little. This recipe was clearly a way to use up bacon grease instead of throwing it out. Mom used a lot more than a 1/4 cup. For consistency. I used one less milk/buttermilk than I should have by this recipe, and used a full cup of bacon grease instead.
Eggs. I really don't remember mom using eggs. But.....EVERYONE I talk to & every recipe I have seen calls for eggs, and the added fluffiness definitely would not hurt. I had medium specialty 3 eggs and so used 2 of them, instead of one large.
Sugar. No Way. Mom definitely did NOT use sugar. If I felt that it really had to be sweet. I would use honey or an artificial sweetener instead of the poison from C&H.
Verdict on my interpretation of your recipe.....I should have used about half as much bacon grease with half of cup more of buttermilk instead. Was a little bit too crumbly and taste was stronger of the grease than it should be. A 3rd egg wouldn't hurt either.
