- 1 Tbsp. extra-virgin olive oil (plus extra for oiling dish)
- 4 cups whole wheat bread (100%, cut into cubes)
- 1 pkg. Italian turkey sausage (sweet, recipe called for one pound, but i used all 5 links, slightly over a pound)
- 3/4 cup low sodium chicken broth (can be canned, recipe called for 1/2 cup)
- 4 stalks celery (chopped small)
- 1 onion (medium, chopped small)
- celery (use more or less onion and, as you prefer)
- 1 bosc pear (chopped small, I left the skin on)
- 1 Tbsp. chopped fresh sage (I used more, for dried rubbed sage I would still use 1 T)
- 1 Tbsp. poultry seasoning (or less, optional, I used Penzeys)
- 1 large egg (beaten lightly)
- 1/4 cup fresh parsley (chopped, do not use dried parsley)
- pepper (salt and, to taste)
- salt (and pepper to taste)
