- 6 cups whole wheat bread cubes (100%, about 1/2 large loaf of bread, cut into cubes)
- 1/2 lb. mushrooms (finely chopped, I used Crimini mushrooms, also called Baby Bella)
- 1 onion (chopped in small dice)
- 1 cup chopped celery
- 2 Tbsp. olive oil (or more, depending on your pan)
- 2 Tbsp. fresh sage (chopped small, if you only have dried sage, use 1 T)
- black ground pepper
- salt
- 2 cups chicken stock (simmered to reduce to 1 1/2 cups)
- 2 tsp. fresh thyme (or use 1 tsp. dried thyme)
- 1 tsp. base (Turkey soup, optional but recommended)
- 1 Tbsp. butter
