  • 1/4 teaspoon salt

  • 1 tablespoon black gram (Urad dal, split, or use mung dal, petite yellow lentils)
  • 1 tablespoon toor dal (Split pigeon pea or use any split pea)
  • 2 teaspoons coriander seeds
  • 1/4 teaspoon black peppercorns
  • 1 teaspoon oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon urad dal (Black Gram, or use mung dal (petite yellow lentils))
  • 12 curry leaf (coarsely chopped)
  • 1 potato (medium, 1 cup, cubed, ½-3/4 inch)
  • 1/2 cubed pumpkin (loaded cup, or butternut or other squash, 3/4 inch pieces)
  • 1/2 cup peas (fresh or thawed frozen)
  • 1/2 cup red bell pepper (chopped ½ inch, 1/2 a medium pepper)
  • 1/2 teaspoon red pepper flakes (or to taste)
  • 2 teaspoons tamarind paste
  • 1 tablespoon water
  • 1/2 teaspoon turmeric
  • 3/4 teaspoon salt
  • 2 teaspoons lemon juice (for garnish)
  • 2 tablespoons cilantro (for garnish)
