- 1/2 cup quinoa (uncooked)
- 1 cup water
- 1/4 tsp. salt
- pinches cayenne pepper
- 1 Tbsp. black gram (Urad dal, split, or use mung dal, petite yellow lentils)
- 1 Tbsp. toor dal (Split pigeon pea or use any split pea)
- 2 tsp. coriander seeds
- 1/4 tsp. black peppercorns
- 1 tsp. oil
- 1/2 tsp. mustard seeds
- 1/2 tsp. urad dal (Black Gram, or use mung dal (petite yellow lentils))
- 12 curry leaf (coarsely chopped)
- 1 potato (medium, 1 cup, cubed, ½-3/4 inch)
- 1/2 cubed pumpkin (loaded cup, or butternut or other squash, 3/4 inch pieces)
- 1/2 cup peas (fresh or thawed frozen)
- 1/2 cup red bell pepper (chopped ½ inch, 1/2 a medium pepper)
- 1/2 tsp. red pepper flakes (or to taste)
- 2 tsp. tamarind paste
- 1 Tbsp. water
- 1/2 tsp. turmeric
- 3/4 tsp. salt
- 2 tsp. lemon juice (for garnish)
- 2 Tbsp. cilantro (for garnish)
