    Ended up 12 hours at 131 and I used cocoa powder instead of instant coffee because my coffee powder disappeared. Part of it was really tender. The parts with more fat and connective tissue weren’t tough, but they were a little chewier. Good flavor and one of my picky eaters had seconds.
