This was really good we made this tonight, lots of flavor. I followed the recipe and made no changes, well only did the meat didn't do the tomatoes. I did almost 2.5 hours at the 130 temp then seared on a cast iron fajita type pan to get good sear marks. We have leftovers, think chopped up and some sort of Asian taco with pickled slaw will be a excellent leftover. Perfect medium with pink color, will be a shame to reheat the leftovers and cook it more but will have great flavor!
