Well...but I used sugar in lieu of honey and no salt, but added 1/4 tsp dry yeast
I keep it refrigerated to hibernate and bring it to room temp overnight before I make bread. When I feed it after use with equal flour/warm water I add a pinch of sugar and a pinch of yeast every other feed. I leave it at room temp for 12 hours after feeding
It is about two months old. The bread is excellent. Moist and heavy.
