I wasn’t sure if I was to use 100 grams of sourdough or 2 cups so I combined 1 cup of water with 1.25 cups of whole wheat flour and added 100 grams of sourdough, letting it stand overnight. In the morning I added everything else and even my daughter who objects to all things sourdough liked them. (Of course she would eat almost anything with syrup on it😁).I thought they were really good, and surprisingly light and tender.

Great taste, nice texture with nice elasticity in the finished pancakes. I think the baking soda was a nice addition that some sourdough pancake recipes don't have.

Batter was a bit thin and the texture wasn't quite right. if I make it again id probably add some flour to thicken it up.

My starter was a bit thin, so I added 1/2 cup whole spelt flour and added 1/2 tsp baking powder with the dissolved soda. Really tasty and filling!
