- 1 rotisserie chicken (shredded, or about 2-3 cups of shredded chicken)
- 10 flour tortillas
- 1 small onion (diced)
- 3 Tbsp. butter
- 3 Tbsp. flour
- 2 cups chicken broth
- 1 cup sour cream
- 4 oz. green chiles (or you can used diced jalapenos but start with just a tiny bit and taste test before adding more)
- 16 oz. Monterey Jack cheese (shredded, be sure to buy block cheese and shred it yourself for the best flavor with this recipe)

This was delicious! I modified between two different recipes. 1 12 oz can of chicken, added 1 tsp cumin, a dash of garlic and onion powder. It would have made 7 enchiladas, but I only had 6. Next time I would adjust the amount of sauce… maybe by 1/3 or 1/2. I also added a little cheddar with the Monterey Jack cheese and put half the green chilis inside the enchiladas and half in the sauce(puréed for my picky hubby).

Sauce was very easy and tasted great . chicken needs something more besides onions and cheese next tome I’ll cook it in salsa then shred it
