- yellow bell pepper (or red)
- jalapeno pepper
- spinach (or kale or swiss chard)
- zucchini
- cilantro
- 1 Tbsp. oil (your choice)
- 1 sweet potato (large, chopped into small chunks, or use 2 small sweet potatoes)
- 1 green bell pepper (chopped)
- 1 bunch green onion (white ends and green part separated)
- 1 clove garlic (minced)
- 15 oz. pinto beans (can of, rinsed and drained, or any beans of your choice)
- 15 oz. diced tomatoes (can of)
- 1 1/2 cups broth (veggie)
- 1 cup water
- 1 tsp. chipotle powder
- 1/2 tsp. spice
- 1/2 tsp. chili powder
- 2 tsp. cumin
- 1 tsp. canela
- salt
- pepper
- 1 lime (or lemon, optional, for juice)
