Description

Slices of grilled eggplant make for a showy meal when they're topped with mozzarella and ham, rolled up and baked in tomato sauce until meltingly tender. Served warm, garnished with basil and Parmesan cheese, they can be served with a side of pasta to sop up the extra sauce. The rolls can be assembled and placed in the prepared sauce in advance. Then, just bring the dish to room temperature and bake it according to the directions.

  • 200 grams mozzarella cheese (sliced)
  • 150 grams ham (sliced into thin strips)

    Directions

    1. Clean and wash the eggplants, then slice them into rounds approximately 1/2 centimeters in thickness, and soak them in cold water for approximately 20 minutes.
    2. Rinse the eggplant slices, dry them well and grill them on a griddle.
    3. Place a slice of mozzarella cheese and some ham on each slice of eggplant.
