- 4 cups cooked chicken (shredded, use chicken from stock that you previously made OR boil or bake some bone-in, skin-on chicken breasts and thighs– then shred)
- 1 white onion (medium, sliced)
- 1 1/2 garlic bulbs (peeled, not just the cloves– the entire bulb!)
- 1 cup canned tomatoes (puréed or crushed)
- 1 tsp. dried oregano
- 1/2 tsp. dried thyme
- 1/2 tsp. ground cumin
- 1/4 tsp. ground cloves
- 1/4 tsp. ground allspice
- 1 cinnamon stick (4-inch)
- 1 bay leaf (dried)
- freshly ground black pepper
- kosher salt (to taste)
- 2 limes (zest from two organic)
- 1/3 cup fresh lime juice (1/4 –)
