This was an excellent recipe! I was a little hesitant at first, thinking "cold noodles? That sounds a little odd." but I am so glad i made it! I don't think there is a better recipe for a hot day, or a quicker way to make noodles . even top ramen takes longer than these noodles to get soft!
I modified the dipping sauce a bit because i did not have bonito flakes or seaweed on hand.
I combined soy sauce, mirin, rice vinegar, a drop of sesame oil, chopped scallion and grated ginger for my sauce, and it was incredibly delicious. This is a good alternative for anyone who doesn't have bonito or seaweed, but it still tasted very authentic, and it did not taste like it was missing anything. overall, it was perfect!
