Soft on the inside light crisp on outside but very stick dough kneaded lots of flour into it managed to make gingerbread house pieces and rolled round cookies

Theses gingerbread cookies turn out fantastic! So soft, chewy and packed with flavour. I did reduce the coffee to 1 tbsp and baked in my oven for 11 minutes.
The only thing I found was that the dough was a little too wet at first so I refrigerated first for about an hour before baking.

Really loved these cookies, great for a family gathering! The coffee flavour was too overpowering for my taste, and most of my family said the same so I would substitute it for milk or maybe lessen the amount. All in all, amazing taste and a great texture! Love these and will be making again
