  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons grated Parmesan cheese

    Directions

    1. Bring 1/2 inch water to boil in medium saucepan over medium high heat,
    2. Using tongs, gently place eggs in boiling water (eggs will not be submerged). Cover saucepan and cook eggs for 6 1/2 minutes
    3. Meanwhile steam asparagus (spears about 1/2 inch in diameter, trimmed) over medium heat until crisp tender 4-5 minutes
