- 1 Tbsp. sugar
- 2 tsp. salt
- 1 pkg. active dry yeast (or 2 ¼ teaspoons)
- 4 1/2 cups all purpose flour
- 1/2 cup butter (melted, divided)

- 2/3 cup baking soda
- 1 large egg yolk
- 1 Tbsp. water
- pretzel salt (or coarse kosher salt)
- 3 jalapenos (sliced, optional)
- 1/4 cup butter
- 1/4 cup flour
- 12 oz. pilsner (Oktoberfest, can also use a, for a lighter beer flavor)
- 1 cup whole milk
- 1/2 tsp. Dijon mustard
- 1 pinch nutmeg (freshly grated)
- 3 dashes Worcestershire sauce
- 8 oz. mascarpone (softened)
- 8 oz. gruyere (shredded)
- 8 oz. gouda (shredded)
