- 1/2 cup peanuts (toasted with skins removed)
- 1 cup unsalted butter

- 16 oz. powdered sugar (measures a little more than 4 cups)
- 1 tsp. vanilla extract

I made this recipe twice. Everyone loves it but you MUST keep it refrigerated or it is way too soft. Also, I always use imported chocolate in my recipes. (Typical grocery-store varieties have too much wax!) I found that the chocolate layer becomes very hard and needs to be softened up in some way. (More PB and less chocolate?)
The caramel layer recipe makes three times as much as you need so rather than have it left over, I made less. Delicious taste.
My biggest disappointment is in the peanut butter fudge layer. It is very soft and without chilling, it will not stand up at all. The three layers separate at room temp. I tried making the peanut butter layer with 2 TBSP less butter but it was too stiff and wouldn't spread easily so I won't do that again. Overall, it is a decent recipe but does need some fine-tuning in order to give this away as a gift or bring it to a party. If you want to make it and keep it chilled right up until you eat it, then make the recipe as is. I am trying to improve it so stay tuned...Or I am open to suggestions!!!
