Very easy to make! I soaked the cashews for 30 minutes, changing the boiling water after 15 minutes. Only needed to add 1 tbsp of water and it turned out so creamy! Depending on the brand of sun dried tomatoes used it may have a different flavour so I adjusted the seasonings used.

It turned out really good even though I didn't soak the cashews. I just added a lot more water until I got to my desired consistentsy. It would be easier to do in a food processor.
I like that it tastes almost cheesy, and it's really filling unlike a lot of dips!
