- 1/2 cup lemon juice (freshly squeezed, 2 or 3 large, juicy lemons)
- 1/2 cup olive oil
- 1 tsp. chilli powder
- 1 tsp. smoked paprika
- salt
- freshly ground black pepper
- 4 chicken breasts
- 2 heads romaine lettuce (shredded)
- 2 red peppers (roasted, deseeded and cut into bite-sized pieces)
- 2 yellow peppers (roasted, deseeded and cut into bite-sized pieces)
- 1 lb. cherry tomatoes (halved)
- 1/2 red onion (sliced very thinly into half moons)
- 1 cup crumbled feta cheese (or cubed)
- 2 green onions (chopped, white and green parts)
- 1 avocado (skin and stone removed)
- 1 garlic clove (minced)
- 1/2 cup cilantro leaves (and stems, roughly chopped)
- 1/2 cup mayonnaise
- 1/4 cup vegetable oil
- 3 Tbsp. fresh lime juice
- 1 tsp. worcestershire sauce
- salt
- freshly ground black pepper
