  • 2 cups ham (cubed,, about 3/4 pound)
  • 2 cups salsa (purchased)
  • 15 ounces black beans (rinsed and drained)
  • 14.5 ounces vegetable broth
  • 1 tablespoon lime juice (OR lemon juice)
  • 1 clove garlic (minced)
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon chipotle chile (chopped,, smoked jalapeno)
  • 3 tablespoons dry sherry

    Directions

    1. In a large saucepan combine the ham, salsa, beans, vegetable broth, lime juice, garlic, coriander and chipotle. Bring to a simmer; ower heat and cook, covered, for 20 minutes. Stir in dry sherry. To serve, ladle into soup bowls.
