- 4 oz. chicken sausage (2 links spicy, diced)
- 1/2 Spanish onion (finely chopped)
- 3 cloves garlic (minced)
- 2 1/2 tsp. smoked paprika
- 1 tsp. dried oregano
- 1/4 tsp. ground cumin
- 1/8 tsp. ground cinnamon
- 1 pinch cayenne pepper (optional)
- 1 cup diced tomatoes (canned, I like to use fire roasted tomatoes when possible for extra smokiness.)
- 3 cups butternut squash (cubed, go for ½-inch cubes)
- 1/2 bunch lacinato kale (center ribs removed, chopped, about 2 cups)
- 1 lb. boneless skinless chicken thighs
- 4 cups low sodium chicken stock

delicious and so hearty perfect fall dish. highly recommend this. would also be great over rice or with salad on side to balance
