- 2 sweet potatoes (large, peeled and cut into 1/2 inch cubes)
- 3 Tbsp. olive oil (divided)
- 2 tsp. paprika
- salt
- 2 chipotle chilies (dried)
- 1 yellow onion (peeled and finely chopped)
- 4 cloves garlic (peeled and minced)
- 1 tsp. dried oregano
- 14.5 oz. crushed tomatoes
- 2 cups vegetable stock (use veggie stock if you want it to be vegetarian!)
- 2 bay leaves
- 3 avocados (pitted, peeled, and sliced, for serving, you should have half an avocado per person)
- sour cream (for serving)
