  • 1/4 green pepper (minced if desired)
  • 2 stalks celery (minced if desired)
  • 1 tablespoon thyme leaves (crumbled)
  • 2 bay leaves (large)
  • 3 teaspoons salt
  • 2 quarts water (brought to a boil but not mandatory)
