- 1 pkg. smoked sausage
- 5/8 lb. mini golden potatoes
- 8 oz. whole baby carrots
- 1 red bell pepper (thinly sliced)
- 1/4 cup green peas
- 1 Tbsp. unsalted butter
- 1 tsp. freshly chopped thyme
- 1 tsp. freshly chopped parsley

Directions
- Boil water in a large pot. Cook the potatoes for 15 minutes, remove and slice in half; set aside.
- In the same boiling water, cook the carrots for 5 minutes and drain.
- Bias-slice sausage into 1/4- to 1/2-inch thick pieces. Heat skillet over medium-high heat and cook sausage 2 minutes. Add the potatoes, carrots, peppers and peas.
- Continue to cook for 10 minutes and finish with butter. Season with the fresh herbs, salt and pepper.

This has become a staple recipe, healthy and simple and makes the dinner rotation every couple months or so. The only change I make is adding 1/2-3/4 cup of chicken or beef broth with the vegetables, turn the heat down, and let everything simmer for that ten minutes. It adds much needed moisture and some flavor, too.

I had to tweak the recipe, since I didn't have all the ingredients on hand. But it still came out really good! I'll be adding this to my collection.
