  • 1 package smoked sausage
  • 5/8 pound mini golden potatoes
  • 8 ounces whole baby carrots
  • 1 red bell pepper (thinly sliced)
  • 1/4 cup green peas
  • 1 tablespoon unsalted butter
  • 1 teaspoon freshly chopped thyme
  • 1 teaspoon freshly chopped parsley

    Directions

    1. Boil water in a large pot. Cook the potatoes for 15 minutes, remove and slice in half; set aside.
    2. In the same boiling water, cook the carrots for 5 minutes and drain.
    3. Bias-slice sausage into 1/4- to 1/2-inch thick pieces. Heat skillet over medium-high heat and cook sausage 2 minutes. Add the potatoes, carrots, peppers and peas.
    4. Continue to cook for 10 minutes and finish with butter. Season with the fresh herbs, salt and pepper.

    I had to tweak the recipe, since I didn't have all the ingredients on hand. But it still came out really good! I'll be adding this to my collection.
