  • 2 tablespoons oil
  • 1 medium onion (cut into 1-inch pieces)
  • 1 medium red bell pepper (cut into 1-inch pieces)
  • 1 pound turkey smoked sausage (cut into 1/2-inch slices)
  • 1 large carrot (cut into 1/2-inch slices)
  • 1 tablespoon Old Bay Seasoning
  • 1/2 teaspoon McCormick Garlic Powder
  • 1/8 teaspoon McCormick Crushed Red Pepper
  • 1 leaf McCormick Bay Leaves
  • 4 cups chicken broth
  • 3 tablespoons tomato paste
  • 1 1/2 cups orzo
  • 14 ounces black eyed peas (drained)
  • 1 zucchini (large, quartered and sliced)

    Directions

    1. In a large saucepan heat oil on medium-high. Add onion and bell pepper and cook while stirring 2 to 3 minutes.
    2. Add sausage and carrot. Stir 5 minutes or until sausage is browned.
    3. Stir in OLD BAY garlic red pepper bay leaf chicken broth and tomato paste. Return to boil stirring frequently.
    4. Add orzo and black-eyed peas. Reduce heat to medium and simmer 5 minutes. Add zucchini. Cook additional 5 minutes or until orzo and zucchini are tender stirring frequently. Remove bay leaf before serving.
