- kosher salt (to taste)
- 1 cup medium cheddar cheese (Tillamook Smoked, shredded)
- 1 cup white cheddar cheese (Tillamook Smoked Black Pepper, shredded)
- 1 cup extra sharp cheddar cheese (Tillamook Vintage White Smoked, shredded)
- 1 yellow onion (medium, diced small)
- 2 Tbsp. canola oil
- 2 cups chicken breast (smoked, diced, a seasoned, cooked breast is also fine)
- 1/4 cup fresh cilantro (chopped)
- 2 cups canola oil (to dip tortillas in)
- 24 corn tortillas (round, 6 inch)
- 4 cups sauce (Ranchero, see recipe above or store bought enchilada sauce)
