- 2 slices bread (your favorite)
- 1 tomatoes (roma or hothouse, sliced into ½-inch slices)
- 1 Tbsp. olive oil
- kosher salt (to taste, I used ½ teaspoon)
- pepper (to taste, I used ¼ teaspoon)
- 1/3 cup chickpeas (canned or cooked)
- 1/4 tsp. cumin
- 1/8 tsp. chili powder
- 1/4 tsp. onion powder
- 1/4 tsp. garlic powder
- 3 leaves fresh basil (2-)
- 1/2 avocado (a medium, or ⅓ of a large avocado)
- 3 oz. tofu (Cheesy, and sauce, recipe follows)
- 3 oz. extra firm tofu (cut into strips lengthwise, see note)
- 1 tsp. olive oil
- 1 tsp. unbleached all-purpose flour
- 1/2 cup unsweetened almond milk (or other non-dairy milk)
- 1/4 tsp. kosher salt (or to taste)
- 2 Tbsp. nutritional yeast
- 1 tsp. Dijon mustard
- 1/4 tsp. paprika
- 1/8 tsp. black pepper
- nonstick spray (preferably natural, non gmo, etc.) or olive oil)

Delicious! Will be making this way more. Very calorie dense in a positive way.

Pretty good. I just suck at making tofu. If someone that knew what they were doing with tofu made this for me, I think I'd be head over heels. Maybe I'll try tempeh next time.

Very yummy! This was my first time that I've liked the tofu I made. I would make sure you cut the tofu into thin slices otherwise it is a very large portion.
